Hi all!! It's been a few weeks since I've blogged and I was beginning to go through withdrawals so here I am with a little random post. Honestly not too much going on around here besides just hoping these Braxton-Hicks contractions will soon turn into the real deal... In the meantime, our days/nights have been filled with lots of QT with our couches and the NCAA tournament - can't complain about that at all!
So, you're probably wondering what in the world the title of this blog is all about...let me explain. Jace and I went up to Concord, NH yesterday to watch our good friends' Lee & Kevin Marcoux's kids play in their Mites hockey tournament. Two brothers (Jake & Brendan) on the same team with a bunch of 5 to 9-year olds...ADORABLE! They get these super focused faces, sticks firmly planted on the ice and then SKATE, SKATE, SKATE, ooops, tripped by the red line (or their own feet)...makes me want to just pack up shop and move to MN so we can be ready with little man when he's old enough to skate :) Sooooo cute! We also got to see Brian & Jill Rodgers and their little girl Ella (who is growing like a weed - almost 6 months old already!) and Patty & Kevin. Jace and I love our Rodgers time for sure! Here are some fun pics from the game:

Now to the Bean Dip... Lee & Kevin had us all over for a BBQ before the afternoon game. We had burgers, hot dogs and chicken from the grill (cannot WAIT until summer) and some great salads/dips on the side...enter bean dip. Patty Rodgers brought this super YUM-O dip with black beans, shoe-peg corn, peppers and scallions. I had never heard of/seen this dip but if any of that sounds good TRY IT! Super easy and here's the recipe from Patty:
------------------------------------------------------------------------------------
1 can black beans (drained)
1 can shoepeg corn (drained)
1 cup feta cheese
scallions (cut to size and amt. you want)
chopped orange pepper or really anything else you like
Set Aside
Mix
:
1/2 cup olive oil
1/2 cup apple cider vinegar
1/4 cup sugar
Pour over bean mixture
Refrigerate overnight
To serve:
Spoon into bowl draining most of the marinade
Serve with tortilla chips, or whatever you'd like!

Great pictures! We think it's a FABULOUS idea for you to move to MN :-)
